I remember as a little girl counting down the days until the next holiday. The chance to get together with extended family and eat delicious food on a beautiful table my mother set got me so excited! It was the little details of the day that really stood out in my young girl mind. My mom had a way of making the everyday more special with simple touches. We always ate on nice dishes, no matter the number of guests. She served simple, but yummy dishes and every table had a centerpiece. My most favorite were the ones that contained fresh flowers my dad had grown in the yard.
Now that I am all grown up with teenagers of my own, I like to follow in my mother’s footsteps by making each holiday and family gathering more special with simple, elegant touches. Last week I shared a peony Easter table for your big Easter dinner. Today, I want to share a more simple table with some easy and delicious dishes to help you throw a simple Easter Brunch for your loved ones. This brunch will work for any Spring or Summer get together!
Most often on big holidays we have one large meal at the end of the day. To start the day, I love to serve a lighter brunch. This preps your tummy for all the food that lays ahead!
To set this table I partnered with Wal Mart and used gorgeous pieces from Drew Barrymore’s new Flower line. They have beautiful pieces for your home that look like you spent a fortune, but are actually very affordable. Gone are the days when Wal Mart was just the place to get the basics for your home. Simple Easter Brunch with Recipes
To set the table, I used Drew’s Vintage Floral dish set. I love the floral salad plate paired with the navy and pink banded dinner plate. The set also comes with navy and pink bowls, which you will see later in the post.
To add some visual texture to your table, use these jute flower shaped placemats. They remind me of Easter grass! Gold flatware make the place setting pop.
For the centerpiece, I used a pretty pink garbage can, also from Drew’s collection. Don’t limit yourself to a vase or pot, get creative and think outside the box.
The Menu
For the menu, I kept things light and beautiful. While on our trip to Maui, I fell in love with avocado toast. So, I recreated this simple recipe to serve for Easter brunch or anytime! It is light and delicious!
On the side I served some fresh berries with a citrus glaze (get the recipe here), a ruby red grapefruit and some citrus water.
Ingredients
- 4 Ripe Avocados
- 1 Bunch Cilantro
- 1 Lemon
- 1/3 Cup Feta Cheese
- Focaccia Bread or any of your favorite bread
Instructions
- Wash and half avocados.
- Scoop out the centers into a bowl.
- Smash gently with a fork.
- Chop desired amount of cilantro. Add cilantro to the avocados.
- Squeeze about a tsp. of lemon juice into the mixture. This will add a tanginess to the avocado and keep them from browning.
- Season with salt.
- Lightly toast your bread
- Top with avocado spread and a few crumbs of feta.
Ingredients
- 1 cup Plain Greek Yogurt
- 1/4 cup Agave or Honey
- 1/2 tsp Vanilla bean paste {or vanilla extract}
- Zest of one orange
Instructions
- Mix all ingredients with whisk until combined. Drizzle over fresh fruit. Serve chilled.
