My kids come home from school famished and needing some extra mom love! A little extra effort and attention goes a long way in filling their stomachs and their hearts! After sharing how I organized our snack cupboard, some of you have been asking what snacks the kids like to eat. Their favorite simple after school snacks are goldfish, popcorn, strawberries dipped in sour cream and a little brown sugar and peanut butter bananas.
Occasionally, I like to surprise my kiddos with a fun after school snack – something out of the ordinary. Sometimes I make their favorite cookies or muffins, pick up their favorite seasonal fruit or surprise them with doughnuts. Other times just sitting with them and listening to their day is enough.
Every once in a while I like to so something EXTRA special for them. Like the back to school ice cream sundae bar. So I searched for a few healthy after school snack ideas and surprised the kids with a fun and healthy after school picnic. These snacks are simple, fun and delicious and a total hit!
To make these fun snacks look even more amazing, I used pieces from Drew Barrymore’s Flower Line at Wal Mart. Her new line features pieces for children that are bright, playful and fun! I fell in love with her heart plates and heart cups and thought they would be the perfect way to show my kids know how much I loved them through food! Fun and Healthy After School Snacks
First, I set the table with the red and white polka dot flat sheet from the Sweet Strawberry bedding collection. Flat sheets make amazing tablecloths! The darling strawberry comforter that comes in the set is perfect to store in your car and use it for picnics or to sit on to watch your children’s sport games. The bedding comes in this adorable tote too!!!
The Menu
Here are the recipes for the fun after school snacks I made! The kids loved them! Their favorite was the fruit ice cream cones!
Banana Chocolate Chip Muffins
Ingredients
- 1/2 cup Butter softened
- 1 cup Sugar
- 2 Eggs
- 1 cup Mashed Ripe Bananas
- 2 cups Flour
- 1 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1 tsp Lemon Juice
- 1 cup Chocolate Chips - we love semi sweet
Instructions
- Preheat oven to 350 degrees.
- Mix all the ingredients together in a large mixing bowl except chocolate chips.
- Mix with an electric mixer until nice and blended.
- Fold in chocolate chips with a spoon.
- Drop into muffin liners and bake 10-15 min or until golden brown on the top.
Apple Nachos – Just take your favorite apples, slice them and drizzle caramel over the top! The kids love these!
Ice Cream Cone Fruit Cups – Fill an ice cream cone with fresh fruit and top with a tiny bit of whipped cream and a cherry or raspberry.
Homemade Strawberry Milk – My kids don’t love milk, but they love this healthier version of strawberry milk especially when it’s served in these darling milk bottles.
Just boil 1 cup of strawberries (chopped), 1/2 cup sugar, 1 cup water. Let it boil for about 10 min. Then strain the mixture with a mesh strainer or fine sieve. Let cool, then add a few tablespoons to cold milk!
